As the founder of a forum, I was curious if there was a way to find out who voted which way on our polls.  And/or if there is a way to change a vote in a poll once someone has voted??

who voted what is anonymous and you can't change your vote.

if you want more poll options, you could always embed a third-party poll from a site like www.polldaddy.com
